### When was barbecue invented?
The history of this succulent sauce is believed to go back as far as the 1800’s with the Native American tribes of the South and East. There’s also traces of similar sauces found across the Caribbean and Africa, so there are plenty of folks to thank for what we have today. Later in history, vinegar was introduced as an ingredient along with other spices like salt and mustard, creating one of the first modern versions of the sauce that we know today. Around the early to mid-1900’s, ketchup, sugar, and Worcestershire sauce became common ingredients for a more complex sauce with even bigger flavors.

 Dickey’s Barbecue Pit became a heavy player in the sauce game almost as soon as we opened our doors in 1941. After three years, two fist-fights, and one small kitchen fire, the perfect complement to Legit. Texas. Barbecue. was born. We’ve printed that same motto on our very own bottles of sauce, just to show that more goes into a good sauce than vinegar and molasses. Today every different region of the U.S. has a variation of the sauce, every bit as different as the places they call home.

### Where is barbecue sauce from?
**Kansas City Style:** Widely considered the thickest of the sauces, it sits on top of meat without being absorbed. Usually made from a ketchup or tomato base, this sauce is has a sweet and tangy flavor profile. Carolina Gold Sauce: A mustard base gives this sauce its unique color and signature tangy flavor with just a hint of heat.

**Texas Style:** In Texas, beef is king, and the sauce is made to complement that hearty taste — typically served on the side. Texas Style Mop sauce is a thinner version that is brushed onto the meat while it cooks. It has a smokier flavor that may be ketchup or vinegar based and with Worcestershire sauce all melded together with slight hints of garlic.

**St. Louis: **Similar to Kansas City style, it’s made with the extra add on of cider vinegar, making the sauce slightly thinner. This ingredient adds a touch of tang along with some acidity and slightly sour flavor. This is perfect for those who like savory a little more than sweet.

With National Brisket Day coming up as well, this is the perfect reason to get everything fired up and ready to throw down – just in time for the summer grilling season!

 The last thing you want for this holiday weekend is for anything to go wrong. If anything, you want everything to be perfect. That is where we come in! We want to share our tips and trick on how to get the best smoked brisket you have ever made. Our easy-to-follow steps have been made so simple, that even your first brisket will come out just right. Enjoy this one-of-a-kind celebration with some Texas-style, mouthwatering brisket that will impress even the most seasoned BBQ aficionado. 

 **Tips in preparation**
 •	Take your time: Even if you don’t have 3 days to smoke a brisket, don’t stress! A few hours can get the job done.
 •	Give it a good rub: Be generous with the rub, nobody wants bland meat. Dickey’s Beef Brisket Rub is the perfect Texas Hill Country brisket blend of spices for the perfect outer bark. Make sure to coat the brisket prior to smoking the meat, to ensure a proper bark when finished.
 •	Bring the wood: Choosing the right wood is essential. You’ve got to get the right smoky flavor that isn’t too overbearing. We suggest hickory, to get that true Texas-style smoked flavor. 
Smoked Beef Brisket recipe

 **Choose the right type of meat:**
 •	Pick a 10-to-12-pound whole beef brisket. When picking a brisket, you want to find one that has a uniformly thick point, so it cooks evenly. It should be 1 inch thick. If it is less than 1 inch, it will overcook and dry out.
 •	Once you’ve picked your brisket, you need to trim off the excess fat. Place the brisket on a cutting board and trim the hard fat from the bottom. Flip it over and trim the hard fat from the top and leave a ¼ inch cap over the entire brisket. You want to also remove the thick fat chunk that is on top of the point where it joins the flat. 
 •	You can rub the brisket and marinate it overnight for the best results, but just rubbing it and cooking it work as well. To rub down your brisket, rub the entire brisket with yellow mustard and liberally season with Dickey’s Beef Brisket Rub. You can also wrap it in plastic and put the seasoned and trimmed brisket in the fridge overnight. This will allow the seasoning to permeate the beef and will give it more flavor.

 **Time to smoke:**
 •	Setup your smoker or pellet grill to cook at 250 degrees. Once the temperature has normalized and the smoke is rolling, you can place your brisket on the grill.
Don’t waste fuel:
 •	The brisket will only take on smoke for a few hours. After 3 hours you only need to maintain the temperature of the smoker. 

 **Wrap it up:**
 •	At this point, wrap the brisket in butcher paper or aluminum foil. Using butcher paper will give you a better bark as it allows the brisket to breathe more. 
 •	Once wrapped, put in the oven. By finishing in a 250-degree oven the finished brisket will be perfectly cooked. More importantly, you do not have to monitor the brisket for another 8 hours. The brisket is done when you reach an internal temp of 195 degrees.
 •	Now you need to place the wrapped, 195-degree internal temperature brisket into a cooler and allow to rest for at least an hour. This will complete the cooking process and achieve a finishing internal temperature of 200 degrees.

 **Enjoy!:** Now your brisket is ready to be served!

###REQUIREMENTS: 

-Minimum of 3.0 GPA on a 4.0 scale – will need to provide transcript

-Pursuing higher education (Associates Degree, Bachelors Degree, Masters Degree, Doctoral, etc.) 

-Required Essay: 2 pages (APA format with work cited, double spaced, TNR, 12 pt. font) 

-Topic: How will this scholarship help you? How do you plan to contribute to your community to give back?

Be sure to submit your transcript, with a minimum GPA of 3.0 on a 4.0 scale. 

Candidates must be accruing a higher education to be approved for this scholarship.

Dickey’s Barbecue Pit wants to help you elevate your week night dinner menu with a true Texas favorite, Brisket Chili – in celebration of National Chili Day on Thursday, February 24. We’re inviting chili enthusiasts, barbecue lovers and newbies alike to cozy up with Dickey’s chili-centric sides, toppers and entrées with a fun spin on our traditional recipes that you can make in the comfort of your own home. (Unfortunately some of Dickey’s recipes are TOP secret, but we promise you’ll be sure to enjoy these!) Below you will find one-of-a-kind recipes that your loved ones and guests won’t soon forget. **Brisket Chili (slow-smoked brisket in chili with beans):**&nbsp;- How to smoke a brisket – you’ll want to smoke meat ahead of time.&nbsp;- Sauté 1 large onion and 1 medium green bell pepper in olive oil in a large Dutch oven. Add 1 clove of garlic and continue to sauté for 1-2 minutes.&nbsp;- Add remaining ingredients (2 lbs. cubed smoked brisket, (1) 46 fl. oz. can tomato sauce, (1) 28 oz. can diced tomatoes, (1) 15 oz. can black beans) and cook for at least 30 minutes or more. Add additional salt, pepper, and seasonings to taste.&nbsp;- Once brisket chili is hot, serve immediately with your favorite toppings. We recommend shredded cheese, a dollop of sour cream, and chopped green onions. **Brisket Chili Walking Taco (Brisket Chili served on top of Fritos with your choice of toppings):**&nbsp;- Prepare toppings such as: brisket chili, queso, lettuce, sour cream, onion, shredded cheese or tomato.&nbsp;- Make sure to have one bag of single serve bagged Fritos for every person.&nbsp;- Cut open the bag of Fritos down the side.&nbsp;- Spoon the brisket chili inside and top with your favorite toppings – it is that easy and such a fun meal! **Brisket Chili Baker (Baked potato topped with Brisket Chili):**&nbsp;- Preheat oven to 400°F. Poke holes in potatoes using a fork or sharp knife.&nbsp;- Rub the potatoes all over with the avocado oil and place on a baking sheet lined with parchment paper. Bake for an hour until they’re soft when pressed.&nbsp;- Remove from oven and let the potatoes rest. Keep the oven on, you’ll use it again!&nbsp;- Cut a slit down the middle of the potatoes and gently squeeze the ends together to open up the potatoes to create space to fill them.&nbsp;- Spoon the brisket chili into the potatoes. Top with the shredded cheddar cheese and place the potatoes back on the baking sheet. Bake for 5 minutes until cheese is melted.&nbsp;- Remove and top with your favorite toppings like sour cream or cilantro. **Brisket Chili Mac (Mac and Cheese topped with Brisket Chili):**&nbsp;- For mac and cheese, buy large or jumbo size elbow noodles. Cook the desired amount of pasta in salted water per heating instructions.&nbsp;- In separate pan, add desired type/s of cheese (sharp cheddar, Monterey Jack, and/or provolone), combined with 1 tbsp. of butter and a splash of milk. Add in cooked noodles.&nbsp;- Whisk mixture continuously, so it doesn’t burn or stick to bottom of the pan.&nbsp;- Load noodle/cheese mixture into baking dish. Spoon in pre-cooked brisket chili, and sprinkle panko bread crumbs evenly on top.&nbsp;- Place in 400°F pre-heated oven for 5 minutes – and voilà!
