Dickey's Barbecue Pit Gameday Catering

The New Year is just around the corner, which means a whole new round of resolutions with hopes to make 2023 the best one yet. We’ve got a few tips and tricks to help bring out the best, with the help of [Dickey’s Barbecue Pit](https://www.dickeys.com/).

**Keep your Rub Simple:** When seasoning your brisket, you’ll be tempted to use multiple rubs and spices to get the burst of flavor that’ll be the talk of the cookout. To get the best out of your meat, keep it simple. Pit Masters across the country have been using a simple rub of kosher salt and coarse black pepper to get the smoky bark we all know and love. If you crave a little more kick, Dickey’s [Beef Brisket Rub](https://barbecueathome.com/collections/rubs-and-sauces) has a subtle flavor that won’t overpower the natural taste of the meat.

**Take Your Time:** Smoking great barbecue isn’t a quick process, so you have to have some patience. Preparation and the actual cooking process can take up to 18 hours, depending on the size of your protein, so relax and clear your schedule. Taking your time, however, doesn’t mean a set-it-and-forget-it strategy. Pay close attention to your progress to ensure the end result is spectacular. From temperature control of your smoker to monitoring the internal temperature of your meat is essential to mastering juicy, tender barbecue. Ultimately, you must love the process to truly love the results so you won’t need to go to a barbecue restaurant for some sliced brisket.

**Don’t Make Huge Changes:** Smoking barbecue is a process for both the food and the experienced pitmaster. There’s going to be a bit of trial and error since there is no one right way to smoke. Make small changes as you grow and adapt your recipes and process to satisfy the people for whom you’re cooking. Changing too much too often or too fast could stall any progress you’ve already made. Stay patient and learn along the way, and trust the process.

**Too Much Smoke:** The bold, smoky flavor of ‘Cue is what makes folks go crazy for it. However, many eager pit masters don’t realize that too much smoke is not a good thing. Too much smoke – otherwise known as “dirty smoke” – can leave your meat tasting bitter and more like an overdone pot roast than a juicy brisket or slow-smoked ribs. In the barbecue world, less is more. You’ll have to find a balance between your heat and smoke to get the most out of your food.

**The Right Cut:** All meat isn’t created equal, so purchasing the best quality of the cut you can afford will make a world of difference. You don’t have to go out and buy the most expensive cut of Prime, but for the best results, search for no less than Choice cuts from your local butcher. After one taste of a quality cut, you’ll be thankful you didn’t settle for less.

**Don’t Get Discouraged:** Barbecue is a blend of art and science, a delicate process that transforms large cuts of meat into tender, delectable satisfaction with fire, smoke and love. You’re going to make some mistakes along the way. Dickey’s quality, slow-smoked barbecue empire wasn’t built in a day, and neither will your next masterpiece. Have fun and enjoy the ride.

SIX NEW YEAR RESOLUTIONS FOR BARBECUE

Everyone has a big, juicy turkey on their table for their [holiday meal](https://www.dickeys.com/quote/holiday?type=carryout) on Thanksgiving Day. This usually means there will be plenty of turkey to go around, and still have some leftovers. Looking for Thanksgiving leftover ideas? Avoid serving your family those boring scraps and dry turkey the day after Thanksgiving Day. Surprise the family with a new and juicy turkey sandwich with a barbecue twist, Texas style. Our experienced pitmasters are here to help you come up with the best Thanksgiving leftover recipe, that is quick and easy.

Let’s talk about these impeccable barbecue turkey sandwiches that we are about to make. With the help of [Dickey’s Barbecue Pit](https://www.dickeys.com/), you can turn those leftovers into a new and exciting meal for the family. With our authentic barbecue sauce and southern style sides, you can have Thanksgiving dinner part 2. But, this time without all the hassle of preparing and cooking in the kitchen for hours!

This quick and easy recipe will only take you minutes and can feed the whole family. First, pull apart your turkey from the bones and skin. We don’t want to eat dry left-over turkey, instead we want to add some sauce to give it some more flavor and moisture. You can toss your pulled turkey in any one of Dickey’s [BBQ sauce](https://barbecueathome.com/collections/rubs-and-sauces) from original, sweet, or even spicy. Now that your pulled turkey is all sauced up, let’s build a sandwich! Put your turkey in between two brioche buns (or any buns of our choice) and add some fresh toppings. You can keep it simple with just pickles or add some of our cabbage slaw available every day. Now that sounds legit!

You already got our BBQ sauce, our toppings, you might as well finish off your family meal by getting a side or two from your [local barbecue restaurant](https://www.dickeys.com/locations). Choose from a variety of our southern style sides like mac and cheese, fried okra, bacon green beans, potato salad, and more. No matter what side you decide to get, they will go perfect with your delectable barbecue turkey sandwich!

Falling for the ‘Cue

## Let us bring the 'cue to you! Good barbecue has a way of bringing people together, a lot better than any other cuisine. The time and effort that goes into even learning how to smoke a brisket or a rack of fall-off-the-bone pork ribs takes things to a whole different level. Take the stress of grilling away with the help of our experienced pitmasters, so you too can enjoy your backyard barbecue. This is where the culture at [Dickey’s Barbecue Pit](https://www.dickeys.com/) all started over 80 years ago. Back in 1941, our grandfather Travis Dickey launched the grand opening of our very first BBQ joint sharing his love for Legit. Texas. Barbecue. Back in Dallas, Texas Dickey’s opened its doors with a simple BBQ menu, at least compared to what we see today. Our first barbecue restaurant served brisket and ham sandwiches, with sides like fries or potato chips. Barbecue is not complete without a cold one, but there was also soda or even milk to go with your barbecue meal. Dickey’s became the local lunch spot that the community loved to come sit, eat, and hear a few jokes from the Pit Master himself, Mr. Dickey. A culture of service, great eats, and greets was created, driving the restaurant that we know today. There are not too many places where you can say you want all the smoke, bring the heat, and chop it up without being looked at a little funny. The secret to having a place like this, where people want to come and visit time and time again, is quite simple. At Dickey’s, we just take the food seriously not ourselves. **Imagine this**: Getting off after a long day at work, picking up the kids from school, and needing fast and [easy dinner ideas](https://orders-assets.s3.amazonaws.com/public/Dickey's_Barbecue_Pit_-_Menu_-_2022.pdf). Just head down to your local Dickey’s Barbecue Pit for the best BBQ in your city. Our slow smoked BBQ meats, savory sides, [original barbecue sauce](https://www.dickeys.com/press/blog/history-of-bbq-sauce), and finally our southern hospitality all together make any visit to our BBQ joint one for the books. We are here to give people a break from their jobs, responsibilities, and anything else that may be weighing on them. “When people ask about Dickey’s, I explain that we’re in the-food-and-the-folks business. We charge them for the barbecue, but the hospitality and tall tales are free of charge,” says Laura Rea Dickey, CEO of Dickey’s Barbecue Inc. There should be no hold up! Plan your visit to the barbecue restaurant near me to get your hands on the best BBQ in your city. To learn more about Dickey’s, follow Dickey’s Barbecue Pit on [Facebook](https://www.facebook.com/dickeysbarbecuepit/), [Instagram](https://www.instagram.com/dickeysbarbecuepit/) and [Twitter](https://twitter.com/dickeys). DICKEY’S ‘CUE-MUNNITY AND CULTURE

### Enjoy Texas-style barbecue at Dickey’s with a BBQ sauce recipe that took 3 years to perfect

Barbecue sauce is a staple to the barbecue genre. This sweet and smoky creation has been enhancing our slow-smoked meats for almost as long as we’ve been smoking them at the original Dickey’s Barbecue Pit. You can try our authentic sauces on the side when you [order to go](https://www.dickeys.com/quote/everyday) when you visit your local BBQ joint, or visit [Dickeys.com](https://www.dickeys.com/). Enjoy the [best BBQ sauce](https://barbecueathome.com/search?type=product%2Carticle%2Cpage&q=bbq+sauce) made by us in 3 sauce flavors; Original, Sweet, and Spicy.

### When was barbecue invented?
The history of this succulent sauce is believed to go back as far as the 1800’s with the Native American tribes of the South and East. There’s also traces of similar sauces found across the Caribbean and Africa, so there are plenty of folks to thank for what we have today. Later in history, vinegar was introduced as an ingredient along with other spices like salt and mustard, creating one of the first modern versions of the sauce that we know today. Around the early to mid-1900’s, ketchup, sugar, and Worcestershire sauce became common ingredients for a more complex sauce with even bigger flavors.

Dickey’s Barbecue Pit became a heavy player in the sauce game almost as soon as we opened our doors in 1941. After three years, two fist-fights, and one small kitchen fire, the perfect complement to Legit. Texas. Barbecue. was born. We’ve printed that same motto on our very own bottles of sauce, just to show that more goes into a good sauce than vinegar and molasses. Today every different region of the U.S. has a variation of the sauce, every bit as different as the places they call home.

### Where is barbecue sauce from?
**Kansas City Style:** Widely considered the thickest of the sauces, it sits on top of meat without being absorbed. Usually made from a ketchup or tomato base, this sauce is has a sweet and tangy flavor profile. Carolina Gold Sauce: A mustard base gives this sauce its unique color and signature tangy flavor with just a hint of heat.

**Texas Style:** In Texas, beef is king, and the sauce is made to complement that hearty taste — typically served on the side. Texas Style Mop sauce is a thinner version that is brushed onto the meat while it cooks. It has a smokier flavor that may be ketchup or vinegar based and with Worcestershire sauce all melded together with slight hints of garlic.

**St. Louis: **Similar to Kansas City style, it’s made with the extra add on of cider vinegar, making the sauce slightly thinner. This ingredient adds a touch of tang along with some acidity and slightly sour flavor. This is perfect for those who like savory a little more than sweet.

### Dickey's Barbecue Pit shares our love for Legit. Texas. Barbecue. across the world!

What comes to mind when you think of Texas style barbecue? Typically, one may think of classic beef brisket, fall-off-the-bone pork ribs, or maybe some pork butt. You are on the right track. Trying to learn how to smoke a brisket? Forget struggling to understand how to use a smoker and let [Dickey’s Barbecue Pit](https://www.dickeys.com/) take care of all the smokin’ while you do all the chillin’. Here at Dickey’s, we smoke our barbecue real low and slow in a big, offset smoker with hickory wood, for 12 to 14 hours a day. Now that is legit Texas style BBQ! Even though the Lone Star State has spread its influence across the world, barbecue looks vastly different outside Texas’ state lines.

Did you know that Dickey’s Barbecue Pit has gone international? Not only can you enjoy our Legit. Texas. Barbecue. in any city or state in the nation, you can also enjoy our BBQ menu across the world! Our international [franchise](https://franchise.dickeys.com/) locations have held on to our barbecue concept, while introducing their own culture into our authentic menu that has been passed down from generation to generation. Barbecue can have a very different look and feel in different cultures and parts around the world. Here’s a look at how other countries prepare and enjoy our Dickey’s barbecue brand.

**Brazil:** One of the most popular styles of barbecue from the southern region of Brazil is called churrascaria. Large chunks of meat are slow cooked rotisserie-style and usually served on metal skewers resembling a sword. Much like its American counterpart, this form of cooking was heavy influenced by Brazil’s cowboy or gaucho culture.

**Japan: ** While there isn’t an absence of beef, pork, or chicken on this island nation, sea food usually takes center stage. Japan’s version of barbecue is dominated by grilling bite-sized chunks over direct heat instead of smoking large cuts of meat as prepared in more western styles. In some restaurants, the grilling is done by the customer right at their table, insuring everything is to their liking.

**Canada:** America’s neighbor to the north has carved out their own lane on Barbecue Road. While Canadian barbecue does have similarities, some key differences are plain and obvious. For example, instead of using brown sugar to bring out a subtly sweet and smoky flavor, maple syrup is used instead. This native ingredient levels out some of the overpowering tang that exists in some sauces.

No matter what corner of the world you come from and how you like to enjoy your barbecue, Dickey’s is here to help bring people from all walks of life together in the best way we know how — sharing the gift of Legit. Texas. Barbecue.

Whether you think of sandwiches as a lunchbox staple or a gourmet meal, they have been around for a very long time. The history of what we call a sandwich goes back to the 1700s with John Montagu, the 4th Earl of Sandwich, from which the name is derived. While playing cards one night, he became hungry and didn’t want to leave the playing table to avoid losing what we think was a hot hand. To satisfy his hunger, he asked for a serving of roast beef to be put between two slices of bread to eat with his hands–thus the “sandwich” was born.

The idea of meat between bread became a classic staple all around the world. At [Dickey’s Barbecue Pit](https://www.dickeys.com/) we have been serving classic sandwiches since our grand opening of our very first BBQ joint, over 8 decades ago in1941. Competition style brisket, pulled pork, and ham sandwiches have been the star of the show for decades, satisfying all foodies and BBQ lovers. Even though the BBQ menu has changed, sandwiches remain a classic served in all of our locations worldwide! Although, no two sandwiches are the same with limitless combinations and variations, they all have something in common – meat & bread.

Our Westerner combines your choice of two slow-smoked meats and cheese on a hoagie roll and can be as simple as double meat or over the top with all the fixin’s. From brioche to a hoagie roll, and all the way up to the limited time King’s Hawaiian Bun, it’s the combination of bread and meat that makes a sandwich. Our bread choices paired with our hickory wood pit-smoked meats means tasty sandwiches like the King’s Hawaiian Spicy Chicken and Cheddar. Upgrade your buns on any sandwich today and just taste the difference it makes. It’s no wonder we are the best barbecue restaurant with over 550 locations, making us the largest barbecue concept [franchise](https://franchise.dickeys.com/) in the world.

The beauty of any sandwich is that the possibilities are endless–they’re only limited by your own classification and imagination. Sandwiches are what you make of them and not everyone agrees what makes a sandwich, a sandwich. If it’s just bread, meat, and the occasional topping, is a hot dog a sandwich? What about a burger? Either way, Happy National Sandwich Month!

I do BBQ engagement party

Barbecue lovers are as different as the places they come from. Because of this, some folks have a different preferred taste to their meat. Some like things nice and sweet and others prefer a bold and smoky flavor.

The taste that you’re going for all depends on a few things, such as what you’re using to smoke it and the rubs and sauces you put on your meat. No matter what your preference, here is our guide to fit your flavor profile down to perfection – just in time for the summer grilling season to impress even the most seasoned BBQ aficionado:

•	Mesquite – Has a strong earthy tone to it which most would say tends to sway towards the smokier bold side of the spectrum. To keep that flavor it’s best to pair it with Dickey’s Beef Brisket Rub.

•	Hickory – This is more on the sweeter side and fills your nose with an unmistakable bold aroma. You can pair this with Dickey’s Caribbean Chipotle Barbecue Rub to add a subtle kick to pair evenly with the sweetness.

•	Oak – A great option if you are a newbie to smoking. It lends to a mild flavor, that is seldom overpowering. Great for beef ribs, brisket, and sausages – pairs well with Dickey’s Rib Rub.

•	Cherry – As you can imagine, the flavor can be on the slightly fruity but mild side. But the flavor makes for a truly amazing result. Works well with chicken, turkey, ham – fantastic with Dickey’s signature poultry rub.

•	Pecan – Tends to have a rich and nutty flavor. Specifically, great when mixed with other hardwood like hickory to balance out the flavor. Works well with briskets, roasts, and ribs, pairing very nicely with Dickey’s Spicy Herb Blend.
