I often promise new owner-operators that I will have nothing to do with our food other than taste-testing. What I love about our business and the segment is that it offers so many doorways into a really lucrative career. Roland [Dickey Jr.] and I were married when I was working in marketing and technology. When we hit the 2008 recession, he said we could ride out the storm or we could take this opportunity to grow in a really challenging situation. I told him we’re made for the latter, and he said, “You have expertise that we can’t afford in other traditional avenues, but if you joined the company in a consulting role, we can see how that works out and take it from there.” I joined to formalize marketing and community marketing, technology, and communications. We uncovered all these opportunities—if we could only spend less time mining our data and instead make it actionable. When Roland was promoted to our holding company, it was a natural fit to adjust my role to CEO since I’d had the opportunity to work with so many different departments. One of the things I’ve learned from my father-in-law and Roland: You’re doing the best in business when you’re not the smartest person in the room. I’m fortunate enough to say that our team is full of many smarter, more capable, and more experienced people. I do think that spending eight years in so many different roles in the company is the only way that I am even mildly qualified to sit in the chair I’m in today. It’s really been wonderful taking our big data initiative, Smoke Stack, to the next level. It started in the back of the house, and now we’ve rolled out marketing initiatives and customer sentiment analysis. We’re also launching a consumer app in the iOS store. The final piece is Alexa. When you’re in a kitchen, you have to un-glove to switch from pit master to general manager. But if your data can talk to you while you’re in the middle of the shift, it reduces that final barrier. What is the best piece of advice you think quick-service executives should hear?Food and folks are equally valuable. You should never be too far away from either. You should be committed to your culinary as much as you’re committed to your people. What’s your favorite menu item at Dickey’s?Pulled Pork Sandwich with cheddar, no sauce—which might be slightly controversial, but I’m a no-sauce girl. What’s your favorite type of food, excluding barbecue?A good steak or great Thai food. Who has inspired you as a leader?Jerry Murray of Murray Branding in Fort Worth. He took a chance and hired me as an intern. Many years later I asked him to head our CMO search and work with Dickey’s and audit it from the outside. That has been a great full circle. Stanly County would pose no objections — the more barbecue joints the better. At least that’s the conclusion of the Seegars family and their market study. Randy Seegars and his son, Chance, opened a Dickey’s Barbecue Pit restaurant in Albemarle about two weeks ago. So far, the new family business is “exceeding expectations,” according to the elder Seegars. “The community has definitely come out for us,” Randy said. With more than 30 years in the restaurant industry, the Seegarses purchased a Dickey’s franchise for Albemarle. Their market study indicated patrons would support another barbecue restaurant with a slightly different take on barbecue. “The Dickey’s family is thrilled to have Randy and Chance Seegars bring Dickey’s Texas-style barbecue to their hometown of Albemarle,” said Laura Rea Dickey, chief executive officer of Dickey’s Barbecue Restaurants, Inc. “With experienced restauranteurs like the Seegars, the Dickey’s brand will continue to grow and serve communities across the world delicious, slow-smoked barbecue.” Dickey’s Barbecue Restaurants, Inc., the nation’s largest barbecue chain, was founded by Travis Dickey in 1941. Two styles of barbecue typically rule the Tar Heel state, eastern versus western. The two stir about as much heated debate as which cole slaw is the better complement to barbecue: red or white. If the debate wasn’t spicy enough, the barbs over which cue is better will surely go hog wild after a new local establishment decided to open another brand in the fray. Instead of western, this one hails from plain ol’ West, as in Texas. “We’re meat specialists here. We’re not going to try something that’s not in our wheelhouse,” Randy said about barbecue joints that like to fry fish, too. Barbecue enthusiasts in the Piedmont usually adhere to the western-style or the Lexington version of pulled pork, primarily defined by a variety of tomato-based sauces. Eastern style is steeped in vinegar and pepper. Dickey’s, the apostrophe before the possessive “s” denotes a star for the Lonestar state, prepares Texas-style barbecue by smoking its meats for 14 hours in a pit, or technology’s modern steel version. The ambiance at Dickey’s is casual, though a tad more upscale than other barbecue joints. Along with the traditional pulled pork, Dickey’s features beef brisket, chicken and pork ribs, too. Sides include the more traditional fixin’s like barbecue beans, slaw, potato salad and green beans. More unique sides include a baked potato casserole, creamed spinach, jalapeno beans, chips and mac &amp; cheese. Price points are slightly higher at Dickey’s than most locals are accustomed to paying, which probably accounts for why their business is better during dinner hours instead of lunch. “Our guests are more than willing to pay extra for quality,” Randy said. They also serve beer, but only craft beer varieties from The Olde Mecklenburg Brewery. Like the food, the cost for beer at Dickey’s is higher than most. Dickey’s is no stranger to North Carolina. The nearest franchise is in Southern Pines. Unlike the Seegars’ restaurant, the franchise farther east features a fryer and serves more foods. While most things in Texas are promoted as bigger, Albemarle’s Dickey’s is among the smallest franchise units available, thus less room for a fryer, Randy said. There’s enough space for 30 guests inside Dickey’s. In fact, the outside deck provides room for 35 guests. Expect heaters to be added to the patio so the colder months are more tolerable. Dickey’s features an open-kitchen so customers can watch the preparation of their meals. Dickey’s is at 720-20 N.C. Highway 24-27 Bypass East, Albemarle. It’s open daily 11 a.m.-9 p.m.

Here's the recipe. Name of Dish: Smoked Whole Turkey Ingredients: 11-12 lb whole turkey thawed Preparation Instructions: Remove all plastic from your raw turkey. Smoke at 240 degrees breast side up in smoker on top of greased grate. Smoke until internal temperature reaches 165 degrees. Plan for 6 or more hours. Leave lid on entire time, no peaking.

Executive chef Noah Siebenaller teamed with Jason Nauert, owner of the Rocky Mountain Institute of Meat, to butcher a whole Berkshire hog. Half of the 265-pound animal was used to prepare the six courses of the pork-centric meal, including a dessert of candied belly with whipped pork fat and beer-infused dark chocolate gelato. Sounds weird, but it was a winning combination. The other half of the pig became a butchering lesson between courses. "It was fun to see Jason breaking down the pig," said Noah Kaufman, general manager at Phantom, 2 E. Pikes Peak Ave. "Everyone seemed very interested in the process. I think this is something we will continue to feature at our beer dinners. Have Jason butcher other animals and our chef prepare the meat." &nbsp;Related:Longtime Colorado Springs Cafe has closedNauert's idea of a pork chop was astonishing. He cut the slab of meat to include two ribs. "I'm guessing this weighs about a pound and a half," he said, holding up the massive chop. "Now that's what I call a pork chop." The day after the dinner, Siebenaller cooked the chops in a sous vide for about three hours. Before serving, he seared the meat and served it with his spicy voodoo sauce. There was enough meat for three hungry teenage boys. Siebenaller rolled out his new fall menu the next day. His signature ground brisket, chuck and short rib beef patty burger is on the menu, and the PB&amp;J Colorado Wagyu burger is there too. Daily soups are offered as a cup ($4), bowl ($6) or in a bread bowl ($9). Go for the bread bowl, which is made by Aspen Baking Co. in Denver. The soup lineup: Mondays, broccoli cheese; Tuesdays, cassoulet; Wednesdays, brisket chili; Thursdays, Thai curry chicken; Fridays, salmon chowder; Saturdays, chipotle chicken; and Sundays, beef tortellini. Companies in data intensive industries such as foodservice should be, according to a panel of users who addressed the topic last week at the Fast Casual Executive Summit at the Nashville Omni. Panelists agreed cloud technology enables faster access to all types of data, including operations, training and marketing. But as with any new technology, change requires champions who can lead. Paul Rubin explains the technology curve of adoption. The technology adoption curve Moderator Paul Rubin, chief strategy officer at ParTech Inc., provider of a cloud-based POS solution, began the session by noting that new technology does not get adopted quickly. While most new software deployments are now cloud-based, Rubin said there are still many deployments that are not. Speaking of technology in general, he said there are early adopters, "early majority" adopters, "late majority" adopters and laggards.&nbsp; Dickey's Barbecue Restaurants might be considered an early adopter. Laura Rea Dickey, CEO, said the company went to the cloud in 2008 seeking better control of its data. "We had to have a universal baseline for information," Dickey said. The company first applied cloud technology to back of the house functions, then brought it to the front of the house.&nbsp; Laura Dickey sees the cloud as a more flexible platform. The cloud enabled the company to compare key performance indicators of different shifts, Dickey said. It also allowed them to quantify qualitative data. She said the company has been able to gain insights about "sentiment analysis." "That was one of the most universal 'a ha' moments," Dickey said. She said the cloud proved to be a more flexible platform to work with than the legacy system they were using previously. Change requires buy-in The change wasn't painless, however. Executing the new technology required convincing people throughout the organization to buy into it. Dickey said the people in the foodservice industry are not data analysts, and they tend to resist change. Nine years after the company deployed the cloud, about 8 percent of the organization (mostly franchisees) are not using it and not gaining the benefit of sentiment analysis. Being able to see data every 15 minutes rather than waiting till the end of the week has proved a competitive advantage, Dickey said. Chris Ruszkowski cites the challenge in achieving buy-in for new technology. Chris Ruszkowski, senior vice president of marketing at Quiznos, seconded Dickey on both the benefit of fast data access and the challenge of convincing the team of the cloud's advantages. "You have access to that in real time," Ruszkowski said. "Marketing is all about reacting to the market in real time." While the management team recognized the cloud's benefits, Ruszkowski said the challenge was convincing top management and store level management to embrace it. To convince people, he had to show how the cloud benefits operations, finance and marketing. Ruszkowski said using the cloud enabled the company to glean insights from social media comments. Having fast access to data also comes in handy when comparing how different stores perform, he said.&nbsp; David Baer sees the cloud as easier for young managers to learn to work with. Firenza Pizza, a three-year-old chain of 12 restaurants that is planning to add 25 more in 2018, uses the cloud for POS, loyalty rewards and inventory management, said David Baer, founder and COO. He said the company did not want to have to deal with third-party tech support, which would mean giving outsiders access to company information. Ease of use noted Baer, who worked for several other foodservice companies prior to Firenza Pizza, said cloud-based management systems have proved easier for young managers to learn than the legacy systems, making them productive faster. "The choices of what you are going to do with that data are endless," Baer said. "Having everything housed on the cloud made it easy." He said the cloud spares them from having to spend a lot of time mining data. "Every management aspect we can, we're putting on the cloud," he said. The company is also using the cloud for sharing blueprints and for producing training videos. The panelists agreed that cloud technology allows their companies to respond faster to market changes, and empowers employees at different levels in the organization to perform better. But since change doesn't come without pain, management has to consistently encourage buy-in throughout the organization.&nbsp;

The Glasgow restaurant is the first Delaware location for the Dallas-based franchise, but the Powers family — including Brenden Jr., Brenden Sr., Trevor and Linda — plan to open a Middletown location in 2018. While the restaurant has only been open for about a month, Powers Jr. said word is getting out. “We get slammed on weekends,” he said. Powers Jr. is in charge of the restaurant’s signature brisket, pork and chicken, which he said involves a very long cooking process. “Everything is smoked,” he said. “The brisket and pork take 14 hours. The ribs take about three hours.” Because the 38-seat restaurant is open seven days per week from 11 a.m until 9 p.m., Powers Jr. gets there early — or stays late — to get the smoking done. For those who haven’t been to Dickey’s Barbecue Pit before, Powers Jr. said the meat plates and the sliders are pretty popular items. “And the sides, the mac and cheese and the baked potato casserole,” he said, adding those are his personal favorites. There’s also a “Deal of the Day” assigned to each day on the calendar. For example, Wednesday is the Pulled Pork and Polish Kielbasa Sausage Westerner plate. These $9.99 deals include sides and the Big Yellow Cup. “The Big Yellow Cup is a big thing,” Powers Jr. said. “You can come in and get it refilled for 99 cents.” Sunday is a good day for families, since Powers Jr. said kids 12 years old and under get to eat free with a paying adult.
