Dickey's Barbecue Pit to Open First International Locations

Companies in data intensive industries such as foodservice should be, according to a panel of users who addressed the topic last week at the Fast Casual Executive Summit at the Nashville Omni. Panelists agreed cloud technology enables faster access to all types of data, including operations, training and marketing. But as with any new technology, change requires champions who can lead. Paul Rubin explains the technology curve of adoption. The technology adoption curve Moderator Paul Rubin, chief strategy officer at ParTech Inc., provider of a cloud-based POS solution, began the session by noting that new technology does not get adopted quickly. While most new software deployments are now cloud-based, Rubin said there are still many deployments that are not. Speaking of technology in general, he said there are early adopters, "early majority" adopters, "late majority" adopters and laggards. Dickey's Barbecue Restaurants might be considered an early adopter. Laura Rea Dickey, CEO, said the company went to the cloud in 2008 seeking better control of its data. "We had to have a universal baseline for information," Dickey said. The company first applied cloud technology to back of the house functions, then brought it to the front of the house. Laura Dickey sees the cloud as a more flexible platform. The cloud enabled the company to compare key performance indicators of different shifts, Dickey said. It also allowed them to quantify qualitative data. She said the company has been able to gain insights about "sentiment analysis." "That was one of the most universal 'a ha' moments," Dickey said. She said the cloud proved to be a more flexible platform to work with than the legacy system they were using previously. Change requires buy-in The change wasn't painless, however. Executing the new technology required convincing people throughout the organization to buy into it. Dickey said the people in the foodservice industry are not data analysts, and they tend to resist change. Nine years after the company deployed the cloud, about 8 percent of the organization (mostly franchisees) are not using it and not gaining the benefit of sentiment analysis. Being able to see data every 15 minutes rather than waiting till the end of the week has proved a competitive advantage, Dickey said. Chris Ruszkowski cites the challenge in achieving buy-in for new technology. Chris Ruszkowski, senior vice president of marketing at Quiznos, seconded Dickey on both the benefit of fast data access and the challenge of convincing the team of the cloud's advantages. "You have access to that in real time," Ruszkowski said. "Marketing is all about reacting to the market in real time." While the management team recognized the cloud's benefits, Ruszkowski said the challenge was convincing top management and store level management to embrace it. To convince people, he had to show how the cloud benefits operations, finance and marketing. Ruszkowski said using the cloud enabled the company to glean insights from social media comments. Having fast access to data also comes in handy when comparing how different stores perform, he said. David Baer sees the cloud as easier for young managers to learn to work with. Firenza Pizza, a three-year-old chain of 12 restaurants that is planning to add 25 more in 2018, uses the cloud for POS, loyalty rewards and inventory management, said David Baer, founder and COO. He said the company did not want to have to deal with third-party tech support, which would mean giving outsiders access to company information. Ease of use noted Baer, who worked for several other foodservice companies prior to Firenza Pizza, said cloud-based management systems have proved easier for young managers to learn than the legacy systems, making them productive faster. "The choices of what you are going to do with that data are endless," Baer said. "Having everything housed on the cloud made it easy." He said the cloud spares them from having to spend a lot of time mining data. "Every management aspect we can, we're putting on the cloud," he said. The company is also using the cloud for sharing blueprints and for producing training videos. The panelists agreed that cloud technology allows their companies to respond faster to market changes, and empowers employees at different levels in the organization to perform better. But since change doesn't come without pain, management has to consistently encourage buy-in throughout the organization.

The Glasgow restaurant is the first Delaware location for the Dallas-based franchise, but the Powers family — including Brenden Jr., Brenden Sr., Trevor and Linda — plan to open a Middletown location in 2018. While the restaurant has only been open for about a month, Powers Jr. said word is getting out. “We get slammed on weekends,” he said. Powers Jr. is in charge of the restaurant’s signature brisket, pork and chicken, which he said involves a very long cooking process. “Everything is smoked,” he said. “The brisket and pork take 14 hours. The ribs take about three hours.” Because the 38-seat restaurant is open seven days per week from 11 a.m until 9 p.m., Powers Jr. gets there early — or stays late — to get the smoking done. For those who haven’t been to Dickey’s Barbecue Pit before, Powers Jr. said the meat plates and the sliders are pretty popular items. “And the sides, the mac and cheese and the baked potato casserole,” he said, adding those are his personal favorites. There’s also a “Deal of the Day” assigned to each day on the calendar. For example, Wednesday is the Pulled Pork and Polish Kielbasa Sausage Westerner plate. These $9.99 deals include sides and the Big Yellow Cup. “The Big Yellow Cup is a big thing,” Powers Jr. said. “You can come in and get it refilled for 99 cents.” Sunday is a good day for families, since Powers Jr. said kids 12 years old and under get to eat free with a paying adult.

After more than 75 years in business and 550 locations in 45 states, the Dallas-based restaurant chain is planning its first international venture, inking a deal with Middle Eastern hospitality group Serenity Hospitality LLC to build 45 locations in seven countries, including the United Arab Emirates, Saudi Arabia, Kuwait, Bahrain, Oman, Qatar and Lebanon. Serenity is lead by CEO Youssef El Habbal, who boasts more than two decades of experience in hospitality, with a focus on concept development and franchise operations, Dickey’s said in a prepared statement. “My family started Dickey’s in 1941 and since then we have grown the Dickey’s brand exponentially, turning it into a household name nationwide,” added Roland Dickey, Jr., CEO of Dickey’s Capital Group. “We have been searching for the perfect partner to be the first to take our company international and I believe we have found that in Serenity Hospitality. They see the vision we have for the future of Dickey’s and will be an integral part of that.” Roland Jr. discussed international plans in a Dallas Business Journal interview last year. At the time, he said the concept had also received interest from operators in Mexico and Central and South America. Dickey’s also restructured earlier this year to facilitate its domestic and international growth. Roland Jr. serves as the head of the restaurant chain’s parent company, Dickey’s Capital Group. Its subsidiaries include Dickey’s Restaurants Inc., which oversees the company’s franchised stores; Dickey’s Barbecue Pit Inc., which handles corporate stores; Wycliff Douglas, which distributes Dickey’s spices and sauces; Spark Inc., which takes care of the company’s online ordering; SmokeStack, Dickey’s enterprise management arm; and other real estate entities. “To be best in class at all that we do, each company needs to have its own focus and not be a derivative of a larger focus,” Roland Jr. added. Dickey’s is North Texas’ sixth fastest-growing franchise and 16th-largest family-owned business, according to the latest DBJ research.

Local Entrepreneur Brings Dickey’s Texas-Style Barbecue to Delano

The nearly 600-unit chain has partnered with Middle Eastern hospitality group, Serenity Hospitality, to bring 45 Dickey's locations to seven countries throughout the Middle East. "Dickey's has been in search for the right partner to take our brand international for some time now, and we truly believe we have found that in the folks from Serenity Hospitality, Roland Dickey Jr., CEO of Dickey's Capital Group, said in an interview with FastCasual. "Their company is an acclaimed hospitality group in the Middle East with experience in the fast casual industry and we look forward to working with them to bring Dickey's to the Middle East." Dickey's chose the Middle East because of its heavy boom in commerce and hospitality. "Dubai and Abu Dhabi particularly are two very popular travel destinations that we look forward to expanding in," Dickey said. Although the menu will be slightly different compared to the American units, it will, of course, include the chain's Texas-style barbecue. "However, we have had to modify it appropriately due to the region we are expanding in,"Dickey said. "For example, pork is typically not consumed in the Middle East, because of this we plan to substitute our pork options for lamb." Serenity Hospitality is led by CEO Youssef El Habbal, who has more than 20 years of experience in the hospitality industry with a heavy focus on concept development and franchise operations. "At Serenity Hospitality, LLC we take pride in owning innovative Food and Beverage concepts. Nation's Restaurant News: Dickey's taking on the Middle East

View the full article here. Mr. Dickey's Hickory Smoked Brisket Serves 8 to 10Smoking Temperature: 225 to 250 degrees FSmoking Time: 45 to 60 minutes per poundKindling: Hickory log, quartered Ingredients:One (4 to 6 pound) beef brisket¼ cup Rib-Ticklin' Rib Rub3 tablespoons canola oil Directions:Place some kindling and a few pieces of newspaper sprinkled with canola oile inside your firebox and light it. Once the fire burns steadily (in about 3 to 4 minutes) add a hickory log. Bring the temperature inside your smoker to between 225 and 250 degrees F. (Make sure your thermometer is calibrated correctly.) Trim the fat cap on the top portion of the brisket if needed, allowing a ¼- to ½-inch thick cap to remain on the brisket. Mix the barbecue rub with the canola oil. It should have the consistency of wet sand. Rub the entire brisket with the rub-front, sides, in all the cracks and crevices. Place the brisket fat-side up on the smoker. Place a foil loaf pan full of water as close to the firebox as possible and replenish the water as needed. Maintaining a temperature between 225 and 250 degree F, smoke the brisket for 8 to 9 hours (45 to 60 minutes per pound). You will need to check your temperature, adjust the vent, or replenish the wood, every 20 minutes during the smoking time. Do not flip, turn, or poke the brisket with a fork at any time during the smoking process. When an instant thermometer reads between 190 and 200 degrees F, the beef is done. At Dickey's we perform what's called a "fork test". We place a meat fork in the fatty end (the deckle) of the brisket, and gently turn. If the meat is done, it should turn without resistance. Place the brisket on a chopping block, and let it rest for 15 to 25 minutes. Slice against the grain and serve. Rib-Ticklin' Rib Rub Yields about 8 cups Ingredients:3 cups Rib Rub¾ cups Grill Spice1 ½ cups ground cumin4 cups cayenne pepper½ cup Lowery's Seasoning Salt1 ¾ cups light brown sugar DirectionsThoroughly combine all the ingredients, making sure the brown sugar lumps are broken up. You can store this rub in an airtight container for up to 3 months.
