After more than 75 years in business and 550 locations in 45 states, the Dallas-based restaurant chain is planning its first international venture, inking a deal with Middle Eastern hospitality group Serenity Hospitality LLC to build 45 locations in seven countries, including the United Arab Emirates, Saudi Arabia, Kuwait, Bahrain, Oman, Qatar and Lebanon. Serenity is lead by CEO Youssef El Habbal, who boasts more than two decades of experience in hospitality, with a focus on concept development and franchise operations, Dickey’s said in a prepared statement. “My family started Dickey’s in 1941 and since then we have grown the Dickey’s brand exponentially, turning it into a household name nationwide,” added Roland Dickey, Jr., CEO of Dickey’s Capital Group. “We have been searching for the perfect partner to be the first to take our company international and I believe we have found that in Serenity Hospitality. They see the vision we have for the future of Dickey’s and will be an integral part of that.” Roland Jr. discussed international plans in a Dallas Business Journal interview last year. At the time, he said the concept had also received interest from operators in Mexico and Central and South America. Dickey’s also restructured earlier this year to facilitate its domestic and international growth. Roland Jr. serves as the head of the restaurant chain’s parent company, Dickey’s Capital Group.&nbsp; Its subsidiaries include Dickey’s Restaurants Inc., which oversees the company’s franchised stores; Dickey’s Barbecue Pit Inc., which handles corporate stores; Wycliff Douglas, which distributes Dickey’s spices and sauces; Spark Inc., which takes care of the company’s online ordering; SmokeStack, Dickey’s enterprise management arm; and other real estate entities. “To be best in class at all that we do, each company needs to have its own focus and not be a derivative of a larger focus,” Roland Jr. added. "Their company is an acclaimed hospitality group in the Middle East with experience in the fast casual industry and we look forward to working with them to bring Dickey's to the Middle East." Dickey's chose the Middle East because of its heavy boom in commerce and hospitality. Once the fire burns steadily (in about 3 to 4 minutes) add a hickory log. Bring the temperature inside your smoker to between 225 and 250 degrees F. (Make sure your thermometer is calibrated correctly.) Trim the fat cap on the top portion of the brisket if needed, allowing a ¼- to ½-inch thick cap to remain on the brisket. Mix the barbecue rub with the canola oil. It should have the consistency of wet sand. Rub the entire brisket with the rub-front, sides, in all the cracks and crevices. Place the brisket fat-side up on the smoker. Place a foil loaf pan full of water as close to the firebox as possible and replenish the water as needed. Maintaining a temperature between 225 and 250 degree F, smoke the brisket for 8 to 9 hours (45 to 60 minutes per pound). You will need to check your temperature, adjust the vent, or replenish the wood, every 20 minutes during the smoking time. Do not flip, turn, or poke the brisket with a fork at any time during the smoking process. When an instant thermometer reads between 190 and 200 degrees F, the beef is done. At Dickey's we perform what's called a "fork test". We place a meat fork in the fatty end (the deckle) of the brisket, and gently turn. If the meat is done, it should turn without resistance. Place the brisket on a chopping block, and let it rest for 15 to 25 minutes. Slice against the grain and serve. Dickey handed out signed copies of his cookbook, “Mr. Dickey’s Barbecue Cookbook: Recipes from a True Texas Pit Master” to the first 50 customers Wednesday. Travis Dickey founded Dickey’s Barbecue Pit in 1941 and ran the restaurant until he died in 1967, at which point Roland Dickey left Southern Methodist University to take over the business. Roland Dickey, with his brother, T.D. Dickey, took the single barbecue stand his father had built and expanded throughout the Dallas-Fort Worth area. In 1994, he sold the first franchise to the Smith family, who are currently franchisees. Roland Dickey Sr. published his cookbook in 2012 and now travels the country, visiting owner/operators and holding appreciation events and making special appearances on local radio and television shows. Tricia and Ron Burkett opened the Lebanon Dickey’s on Oct. 5 after seeing the success the restaurant had across the country. “I kept seeing these Dickey’s open, and their were lines out the door,” said Ron. “I found the food was good. I mean they really have good food.” Tricia held the door open for customers Wednesday as the line went all the way outside. There was even a group waiting before the store opened to be the first people inside. In its first week open, the Lebanon location set a franchise record with the most barbecue sales ever in a 1,500-square-foot store. According to Ron Burkett, the Lebanon restaurant was also close to breaking the record for any sized store. “We definitely feel like we made the right decision opening the store,” said Tricia Burkett. “There have been some hiccups, but we feel good about how we’ve done so far.”

This is a great way for the community to come together, eat, and just enjoy a fun-filled event.”</div><div> </div><div>Tickets are on sale now for $25.</div><div> </div><div>“We do encourage everyone if at all possible to buy your tickets early,” Parrish said. “They are going fast, but we do have some still available. Tickets can be purchased Saturday, if ribs are still available.”</div><div> </div><div>The Boots and Badge event is sponsored by the Dickey’s Corporation as a way for the community to support their local first responders, Smith said.</div><div> </div><div> </div><div>“This event is something Dickey’s Corporation does on a regular basis,” Smith said. “However, one day Chief Parrish was dining with us and he saw posters promoting the event. We began to discuss, it and in no time the event was planned. We are also working with the Dothan Fire Department regarding hosting this event to benefit them as well. Dickey’s is a proud supporter of law enforcement and fire departments, and this is just one of the ways we like to help out in our community. Also during this event we have several other businesses located in the same shopping area participating by offering giveaways. We believe this will also draw attention to what this area has to offer. And worked for a major food distributor before that. Which brought him to Joplin, Missouri, living there when a catastrophic tornado hit.You never forget that. Never. And after you go through something like that, if it doesn't tug at your heart and make you want to help, i don't know what will. With that on his mind... And food in his background... He's launching hot meals u–s–a... A new non–profit that will deploy following disasters. Get on the ground quickly and get those folks some hot food in their stomachs so they can turn around and start to help themselves recover. He's raising money and recruiting corporate sponsors now... To outfit a 50 foot semi trailer with grills, ovens, coolers, even sinks. Once one of these things are built and we hit the ground, we're going to be able to deliver 10–15,000 meals a day and that's unheard of. Hot foods u–s–a will be staffed by food service professionals who understand how to feed a crowd safely. We do this every day. This is a group of server certified cooks and chefs. Breakfast, lunch, and dinner will be served. And he hasn't forgotten about dessert... After seeing kids smile with an ice cream in their hands. It's all about helping to start that recovery process.

Even if mini-diners stick to tater tots and chicken nuggets, those meals can add up. The Toledo family of Fresno restaurateurs know the challenges. They have fed generations of families since they started Toledo’s Mexican Restaurant 26 years ago. And they are experiencing it firsthand as their own family grows. “We know people love to go out to eat dinner. It’s a real treat. It’s a real experience. Also, it’s a little pricey sometimes,” said Carmen Toledo, restaurant sales manager, who has one son. “We know not everyone has disposable income, especially people who have multiple children.” In 2013, Toledo and her brothers, Jesse (who has five daughters) and Andrew, started a “kids eat free night” on Wednesdays. It was a way to help families still recovering from the recession, a way to help families who were on the go midweek, and a way to promote family time, Toledo said. Antonio’s Mexican Restaurant. Kids 12 and under eat free between 3 and 9 p.m. Mondays with an adult entree. The Little Tony Special gives your child a choice of a taco, bean burrito, enchilada or cheese quesadilla, with rice, beans and a soda. Don’t like rice and beans?
