  Dickey’s Barbecue Pit launched a new store concept last year, and with that new concept came new uniforms. The uniforms are a piece of a larger overhaul by the nation’s largest barbecue chain,
  which includes a new training program with an employee succession plan, sustainable elements in-store and more profitability for owner-operators.

  The new uniforms were sourced from Bob Lilly Promotions, a local Dallas company started in 1999. Dickey’s has been working with Bob Lilly since early 2015 to develop a uniform that would reflect
  the new look and feel. The main focus of the project was wearability. The new uniforms were designed specifically to be able to be worn outside of the restaurant and to be comfortable and durable
  enough to last long-term inside the restaurant. “Dickey’s has had an incredible attention to detail throughout this process,” says Bob Lilly Jr., CEO of Bob Lilly Promotions. “It’s great to work
  with an organization that takes such pride in their brand.”

  The new uniforms feature a black, welder-style denim apron, complete with twill ties for a rustic, industrial look. By far, this item has been the most popular among Owner/Operators ordering
  uniforms. The manager, or ‘Pit Boss’ uniform is a Western-style plaid shirt available in three colors, and T-shirts for ‘Pit Crew’ members are now in a softer wash with water-based paint to be
  softer and more durable than previous shirts. The whole uniform is topped off by a black and burlap cap and embellished with a chalkboard-style nametag.

  “The new uniforms have been well received by our pit crew. They are trendy yet authentic and relaxed,” says Roland Dickey Jr., CEO of Dickey’s Barbecue Restaurants Inc. “Dickey’s has a completely
  new look and feel from the new uniforms to the new store prototype, while keeping the same consistency and quality in food that Dickey’s is known for.”

  But he also got to recalling his grandfather, who started Dickey’s 75 years ago and operated his one store for 26 years, making the best barbecue he knew how—which involved a whole lot of smoke.

   “The dude would smoke three packs of cigarettes during the day, and then he’d go home and smoke two more,” recalls Dickey. “Back in those days they had a barbecue pit” with no ventilation.
  “You’d open the pit and all the smoke would go 'fooosh.'

  “He got more smoke than oxygen, but he made it to 69,” Dickey says. “He was like the consummate barbecue, just a purist.” And although Dickey’s not sorry that health habits are far better today, he

<p>The big game is less than two weeks away and the match has officially been set. While I have no horse in the race, this is quite a bittersweet time. Sure, we get to watch (what I hope will be) a great championship game, but it is also the last football game of the season, which means a long and boring six months without my favorite sport.   North Auburn’s growing Highway 49 business strip will have some Texas barbecue flavor to add to its expanding restaurant roster with the opening of Dickey’s Barbecue Pit.
</p>

  The Dickey’s signs are now up on one of two new buildings at the Willow Creek Plaza, adjacent to Home Depot.
</p>
<p>
  Dickey’s is a privately owned chain of more than 500 franchises. Its head office is in Dallas and it’s been in business since 1941. It’s the largest barbecue chain in the United States.
</p>
<p>
  “We are excited to confirm that Dickey’s Barbecue Pit is scheduled to open in Auburn on or around February 25,” Dickey’s Public Relations Director Kimberly Harms said Monday in an e-mail message.
</p>
<p>
  The Dickey’s website states that California is second only to Texas in the number of Dickey’s restaurants.
</p>
<p>
  Georgetown’s Jerry Rose hadn’t noticed the new Dickey’s sign that had gone up on the side of a building opposite the recently opened Smart &amp; Final Extra grocery store at the Highway 49-Willow
  Creek Drive crossroads in North Auburn.

  Rose said his eatery of choice when he visits Auburn to shop is the Sierra Grill Smokehouse nearby and the idea of barbecue at Dickey’s was a new one.

  “I haven’t heard of them,” Rose said. “This is the first time I’ve been here. They’re sure building this place up.”
</p>

  As well as Dickey’s the Willow Creek Plaza and Rock Creek Plaza across Highway 49 will soon also have openings for Chipotle, Panda Express, Panera Bread and Chick-fil-A.

<p>Brothers Steve and Tim Earley along with their father Paul are longtime Mississippians, as their family has lived in The Magnolia State for over 40 years. <p>Originally from Southeast Texas, Owner/Operator Dan Pelfrey has always been a barbecue fan.   Waskom’s store is located across the street from Northwestern University in Natchitoches, Louisiana. Having partnered with universities his entire career, Waskom leveraged that experience as he got
  started in the barbecue business. In discussions with the school’s athletic director, Waskom learned his large restaurant could benefit from the town’s 20,000 population with its high-protein menu
  options and TVs covering the school’s team sports on demand. Filling that need has been an excellent community engagement tool for Waskom’s Dickey’s store.

  Waskom has found a niche market not only for sports but for what he calls “in-store catering.” He was able to use extra space in his shopping center as a party room and he frequently hosts wedding
  parties, birthday parties and other get-togethers, in which he sets up full-service catering spreads in-house. This holiday season, he booked many holiday parties.

  Waskom knew he wanted to choose a franchise with an excellent training program. “The Shift Meeting Training Videos are great for training new and existing employees,” Waskom says of Dickey’s daily
  training videos. “The videos are great visual aids and I find them very helpful to enforce Dickey’s brand standards.” Waskom consistently uses the training and marketing tools to grow his business
  in Natchitoches and will follow the same model at his new store in Lafayette.

  The restaurant operations field tends to be a boys’ club often times, but Dickey’s Barbecue Pit owner-operator Gina Young defies gender stereotypes as the only female in an elected position. NFAAC,
  or National Franchisee Advertising Advisory Council, is Dickey’s elected council of six owner-operators who make system-wide decisions on everything from advertising strategy to limited-time
  offers.

  Young started her barbecue career in 2012, when she opened her first Dickey’s Barbecue Pit in Olympia, Washington. Previously a stay-at-home mom with no restaurant experience, Young benefitted from
  the extensive training support from day one. She hired her brother Rob Williams, a volunteer firefighter, to be her general manager, and now has a very successful store.

  In 2015 Young was nominated for the position in NFAAC. Her region consists of every store on the West Coast, and every owner-operator casts a vote. She was elected by a landslide and began the
  position in September.

  “I feel right at home here, and it is empowering to know I am the only female on the board,” Young says. “I appreciate this opportunity to interact closely with the brand and help make decisions
  that impact the whole company, while representing fellow owner-operators.”

  As a NFAAC representative, Young’s responsibilities include championing the brand while advocating for the owner-operators whom she represents. The council works on cost and profit measures, menu
  changes, and other brand initiatives. The biggest moment for Young, however, was the launch of the new generation prototype store in late 2015. Launched a month after she took the position, Young
  was able to travel to Dallas and get a personal tour of the new concept from CEO, Roland Dickey Jr.

  Dickey's Barbecue Restaurants has hired Barry M. Barron Sr as COO, according to a company press release. Barron held the chairman/chief executive position for Buffet Partners Holding Company, the
  parent company of Furr's Fresh Buffet. Prior to that, Barron was CEO for Red Mango USA. Barron also held executive leadership positions at ACE Cash Express, PepsiCo and Papa John's Pizza.
